Active taps
The number of taps actually collecting during a run — often fewer than your total count (pulled taps, dry holes, vacuum leaks).
Why it matters
Recording active taps per collection keeps your per-tap yields honest, so seasons and locations compare fairly.
Brix (°Bx)
A measure of sugar concentration — the percentage of dissolved sugar by weight. Sap typically runs 1.5–3 °Bx; finished maple syrup is at least 66 °Bx.
Why it matters
Logging brix tells you how much syrup your sap can make and helps you spot strong and weak runs across the season.
Flow window
A stretch of hours when weather favors sap flow — typically after a hard freeze, thawing into the 30s–40s °F.
Why it matters
The forecast highlights flow windows so you can plan collection and boiling before the sap arrives.
Freeze–thaw cycle
A night below freezing followed by a day above it. Each cycle recharges stem pressure and restarts sap flow.
Why it matters
Seasons with many cycles produce more sap; the forecast counts them to estimate what your season has left.
Sap flow
The movement of sap in a maple, driven by freeze–thaw cycles: freezing nights build pressure, warm days release it through the taphole.

Understanding flow helps you predict good collection days and plan crew time around the weather.
Sap temperature
The temperature of sap at collection time.
Why it matters
Warm sap grows bacteria faster, which darkens syrup and risks off-flavors — cold sap buys you processing time.
Sugar content
How much sugar your sap carries, measured in brix with a refractometer or hydrometer.
Why it matters
Higher sugar content means less boiling per gallon of syrup — it drives your yield and fuel costs.
Tap
The hole drilled into a maple each season, fitted with a spout that sends sap into tubing or a bucket.
Why it matters
Tap counts are the base unit of your operation — forecasts, yields, and lease terms are all figured per tap.
Production & grading
Density
How concentrated finished syrup is, measured in °Brix — legal syrup must reach minimum density (66 °Brix in most jurisdictions).
Why it matters
Under-density syrup can ferment and is illegal to sell; over-density wastes yield and can crystallize.
Invert sugar
Sucrose that has split into glucose and fructose during the season and the boil — it rises as sap ages and microbes work on it.
Why it matters
Invert levels affect flavor, color, and how syrup behaves in value-added products like candy and cream.
Syrup grade
The color and flavor classification for maple syrup: Golden, Amber, Dark, or Very Dark.
Why it matters
Grades trend darker as the season warms; logging grade per batch helps you match production to what your buyers want.
Yield ratio
Gallons of sap needed to make one gallon of syrup — roughly 86 divided by sap brix (the “Rule of 86”).

Tracking it shows how efficiently your operation turns sap into syrup, and how sugar content moves through the season.
Bottling & traceability
Lot
A batch of packaged syrup you can identify and trace — typically one bottling run from one source of bulk syrup.
Why it matters
If a problem ever surfaces, the lot is what lets you recall one batch instead of everything you’ve sold.
Lot genealogy
The family tree of a lot: which barrels filled it, which boils filled those barrels, and which collections fed the boils.

Mass balance
A reconciliation of inputs and outputs: sap collected, syrup made, bulk stored, retail packed, and sold should roughly agree.
